Amarena Cherries

It was a quiet weekday night. Dave was setting up the pastry station, patiently explaining everything to me as he got ready for service.

“Have you had these before?” He asked as he cut open a vac-packed bag and poured its glossy contents into a half litre container and lined it up with the rest of the mise en place.

I shook my head. They looked like cherries in a heavy, dark syrup. I had only ever seen maraschino cherries, which are more of an unnatural bright red. These were much darker in colour, almost purple.

He plucked a spoon from the metal jug of warm water and fished a cherry out from the container. Continue reading
