Pastry cream and politics

Recently I haven’t been the new girl at work.

It’s a nice change, but I’ve had another thing added to my daily mise en place list: help train the new girl.

She’s Chinese of course, and I can’t help but feel envious that she understands everyone. But communication isn’t always about language, and sometimes the girls feel like she doesn’t quite understand them either. Continue reading

Definitely not in St. Bonnet anymore

“Steph, seriously. You know you live here now, right? You can always come back next week”.

My friend Steven shook his head as I bought my third pastry in half an hour.

I paused for a second, and try to let everything finally sink in. All my stuff is actually here, my goodbyes were said at Marcon’s, I don’t have to go back to St. Bonnet the next day..because I live here.

Dark chocolate mint eclair

I really should be packing for my move to Paris this Sunday, but instead, I’d rather write about what I created at work today.

As I had mentioned in my previous post, I’m working alone in the boulangerie this week. I wasn’t too happy to hear the news- there’s always so much work to be done, even for two people. It turns out though, that I work much more efficiently and quickly by myself.

Like yesterday, I finished all my mise en place..by about 2pm.

So today, I decided to play around with eclairs.
